We've been doing a lot of Halloween and fall decorating around the house lately, and it really put me in the mood for a pumpkin-y treat. I'm already a big fan of pumpkin cookies, but I found a recipe that makes me sing! Fast, easy, take the ingredients right out of the pantry, and yummy! But, best of all - a ONE point treat!!
Pumpkin Cookies
1 box spice cake mix
1 (15 oz. ) can pumpkin
3/4 cup chocolate chips
Combine together. Drop by spoonful on a lightly greased cookie sheet. Bake at 350 degrees F. for 18-20 minutes. Makes 3 dozen cookies. 1 point each.
There is a bit of a debate between DH and I whether these are truly 1-point cookies. He feels this yummy recipe is too good to be true: all that pumpkiny goodness and chocolate chips? Sorry, darlin' -- I've done the math: they are 1 point cookies.

I was thinking of posting my pumpkin cookie recipe, too ( see - we ARE kindred spirits!) However, I know mine have waaaay more Points than 1!

I've been hearing about this cake box pumpkin recipe. You're the third blog to reference it. (Although the first to use choc. chips. LOVE that idea.) The other people make muffins out of the mix. One girl use spice cake and another used choc. I HAVE to try them now.
Hey, I'll bet this recipe could be adapted to make a better 2 or 3 point cupcake. (Remember that last recipe we did that with? It was Ok, not great.)

Hey everyone -- one more tip on these cookies. I found that I like milk chocolate chips better than semi-sweet in this recipe. I think the milk choco chips blend better with the pumpkiny taste.
